My Favorite Low carb Pancakes
I absolutely love these low carb pancakes that are made with almond flour. They are so delicious and even more so if you love almonds the way that I do. Almonds are very nutritious, they contain vitamin E, magnesium, calcium, selenium, and many other nutrients including important phytochemical (s ).
- 1 cup almond flour (meal)
- 2 eggs
- 1/4 cup water (for puffier pancakes, you can use sparkling water)
- 2 T virgin coconut or vegetable oil
- 1/4 teaspoon salt
- 1 T stevia or sweetener of choice.
Mix all ingredients together and cook as you would any pancake recipe. I like to use a nonstick pan with a little oil. These pancakes won’t “bubble” on top the same way as regular pancakes. Flip them when the underside turns brown.I like to serve these with sugar free maple syrup, feel free to serve them with the topping you prefer.Yield: Six small pancakes
