Considering my obsession with all things “diet”, I had no choice but to investigate this whole gluten free diet… thing.  I heard some encouraging stories of unexpected weight loss after switching to a gluten free diet from friends and coworkers. And recently I spoke with a cousin of mine that I hadn’t seen in a while who lost a ton of weight and almost looked like a different person all together. He said that he had been forced to go on a gluten free diet because of some rather nasty stomach issues. The weight loss was an unintentional but welcomed side effect. So I now I am hooked, I want to know more about this.

Gluten Free Diet – Baked Goods?

In the last year I have been asked on more than one occasion to bring a baked good to a party . I love to bake, so I am always happy to oblige, but this past year I got a number of requests for gluten free cakes and cupcakes for people who are on a gluten free diet. At first I wasn’t sure if I should accept the request since I have no experience in creating baked goods with gluten free flour and I didn’t even really know what that was exactly until recently. I have to admit that I was pleasantly surprised by all of the choices at the supermarket. There were a good amount of choices for cake mixes, flour blends, alternative flours, etc. And I was even more surprised by the finished product that I ended up with.

Surprisingly Dee-licious Gluten Free Diet!

When I say that I am picky about my baked goods, I mean it. I have been baking for 25 years and I know what I like, I know what is good and I think people who know me respect my opinion on these things because they have tasted my  goodies and they are so good. Well, this gluten free stuff is good. I really did not expect that. I made a dark chocolate gluten free cake for my cousin Mandy’s wedding shower and it got gobbled up so fast, I really couldn’t believe it.

Gluten free diet, what about wheat?

I also couldn’t believe how much faster I felt full and satisfied eating a small piece of gluten free cake as compared to a piece of traditional wheat flour based cake. This whole gluten free diet thing is starting to make sense now. Come to think of it, I have read before that wheat flours which contain varying amounts of gluten, stimulate the appetite. And I have to admit, I have noticed this in my own personal experience of being a carb-a-holic.
